I whipped up this salad for lunch today and boy, was it good! Here's the recipe:
(serves 1)
olive oil
1 ciabatta roll
about 2 teaspoons minced garlic (jarred minced garlic is a time saver!)
about 12 cherry tomatoes, halved
1/2 cucumber, peeled and sliced
basil, around 8 pieces, chopped
a sprinkling of capers
salt/ pepper
1 Tablespoon red wine vinegar
dried Italian seasoning
Heat pan w/ some olive oil on med/high heat. Break up ciabatta & fry till crisp. Careful not to burn and stirring periodically.
Heat olive oil in another pan. Add garlic & saute on med/high heat. Add tomatoes and stir occasionally. While they're cooking slice the cucumber and basil.
In medium bowl add bread when it's finished. Then add cucumber, basil, capers, and tomatoes once they are nice and soft. Sprinkle with salt & pepper. Add 4 tablespoons olive oil and 1 tablespoon vinegar, stir. Add to plate and sprinkle with Italian seasoning.
