Today was a pretty easy cooking day for me! (yay!) Here's what I had:
Breakfast: oatmeal with fresh blackberries and strawberries (sprinkled maple sugar on them the night before and let them sit in the fridge overnight). Steamed collard greens.
Lunch: Pasta salad (made last night and chilled in fridge) using brown rice elbow noodles, Drew's Italian dressing, sliced olives, jarred red peppers, tomatoes, cucumber. Bruschetta topped with tomatoes, garlic, olive oil, dried basil or fresh basil if you've got it.
Snack: pistachios and banana.
Dinner: taco casserole made with crispy taco shells, refried beans, corn, picante, topped with a little Tofutti Sour Supreme. Avacado salad with romaine lettuce, tomato, lemon juice.
Desser: Back to Nature classic creme cookies.
Tip: to add sweetness to your food add some raisins! Great in cereal, salads, rice dishes, and cookies, of course!

Ooooh, I never thought of putting maple sugar on oatmeal instead of maple syrup ... great idea! Must try tomorrow morning!
